Cake Decorating

Whether it’s for a party, a birthday, anniversary, or wedding, it is a great skill to be able to decorate a variety of cakes confidently. And with a few hours learning the tips and techniques that a professional takes years to develop, you will be able to produce beautiful cakes for your family and guests.
We will work with several different types of cakes and tortes. You will make and master working with ganache, glaze, and buttercream. You will frost (or as the pros say, “baste”) a simple layer cake and finish the sides in several different ways. We will do this with buttercream, glaze, and ganache. Then we’ll move on to finishing touches for the top. This will include working with melted chocolate for writing and decorating, and learning how to handle a pastry bag and make simple flowers and borders.

Making Italian meringue buttercream frosting
Making ganache and chocolate glaze
Working with a decorating turntable
Basting a cake properly with buttercream
Pouring ganache/glaze
Basic pastry bag usage
Simple flowers and borders
The weekend includes:
Late light supper Friday evening when you arrive along with dessert and coffee
Friday and Saturday nights’ lodging in spacious rooms with private bath
Full country breakfasts on Saturday and Sunday
Sit-down Saturday night dinner with appetizer, salad, main course, and dessert (alcohol is BYO)
Saturday afternoon cooking session and all materials; the class recipes
